Description

This Easy Gluten-Free French Onion Soup recipe features deeply caramelized sweet onions slow-cooked in butter, enriched with beef broth and white wine, and topped with melted Gruyere cheese over gluten-free bread. Perfectly comforting and naturally gluten-free, this classic French soup is ideal for cozy dinners or entertaining guests.

Ingredients

Soup Base

  • 4 cups sweet onions, slivered
  • 1/2 cup salted butter
  • 2 cloves garlic, minced
  • 2 teaspoons coconut sugar (or brown sugar)
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 4 cups beef broth (regular or low-sodium)
  • 2 cups water
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 1/2 cup white wine

Toppings

  • 1 cup Gruyere cheese, shredded
  • Gluten-free crackers or gluten-free baguette slices

Instructions

  1. Prepare Onions: Remove the onion peel and cut off both ends. Cut each onion in half, then place flat side down and thinly slice into half-moon shapes to get 4 cups of slivered sweet onions.
  2. Start Cooking Onions: In a pan, melt 1/2 cup salted butter over medium-low heat. Add the sliced onions and cover the pan.
  3. Soften Onions: Cook onions on medium-low heat for 5 minutes until they begin to soften, stirring occasionally to prevent sticking.
  4. Add Seasonings and Caramelize: Stir in 2 cloves minced garlic, 2 teaspoons coconut (or brown) sugar, 1 teaspoon salt, and 1/2 teaspoon ground black pepper. Cover and reduce heat to low, simmering for 20-30 minutes until onions are deeply caramelized. Stir occasionally to ensure even cooking and prevent burning.
  5. Note on Onion Reduction: The onions will reduce dramatically in volume, which is expected as they lose moisture during caramelization.
  6. Transfer Onions to Soup Pot: Pour the caramelized onions into a separate soup pot to prepare the broth.
  7. Deglaze Pan: Pour 1/2 cup white wine into the original pan used for caramelizing onions and scrape up any browned bits from the bottom to capture flavor. Add this deglazed mixture to the soup pot with onions.
  8. Add Broth and Herbs: Add 4 cups beef broth, 2 cups water, 1 teaspoon dried thyme, and 2 bay leaves to the pot. Cover and simmer on low heat for 1 hour to develop rich flavor.
  9. Serve Soup: Ladle the hot soup into oven-safe bowls.
  10. Add Toppings: Place a gluten-free cracker or baguette slice on top of each bowl, then sprinkle evenly with shredded Gruyere cheese.
  11. Broil Cheese: Arrange the bowls in a baking dish and place under the oven broiler until the cheese melts, bubbles, and turns golden brown, about 3-5 minutes. Serve immediately.

Notes

  • Using sweet onions enhances the natural sweetness and caramelization of the soup.
  • For a vegetarian version, substitute beef broth with vegetable broth and omit the Gruyere cheese or use a plant-based cheese alternative.
  • Be sure to watch the soup carefully during broiling to prevent burning the cheese.
  • The soup can be prepared a day ahead; reheat over low heat and add toppings fresh before serving.
  • Using low-sodium beef broth allows better control over the salt content.
