Ingredients
Soup Base
- 3 Tablespoons salted butter
- ½ onion, chopped
- 2 cups chopped carrots
- 2 cups chopped celery (about 6 ribs)
Chicken & Seasonings
- 2 cups chopped rotisserie chicken
- 1½ teaspoon garlic powder
- 2 teaspoons chicken bouillon
- ½ teaspoon ground pepper
- ½ teaspoon dried thyme
Liquids & Noodles
- 4 cups chicken broth
- 3 cups water
- 2 cups egg noodles
Instructions
- Sauté aromatics and vegetables: In a pot over medium heat, melt the butter. Add chopped onion, carrots, and celery. Sauté for 8-10 minutes, stirring occasionally, until the vegetables are tender and fragrant.
- Add chicken and seasonings: Stir in the chopped rotisserie chicken, garlic powder, chicken bouillon, ground pepper, and dried thyme. Mix everything thoroughly to combine the flavors.
- Pour in liquids and bring to boil: Add the chicken broth and water to the pot. Stir well, then bring the mixture to a gentle boil over medium-high heat.
- Cook the noodles: Once boiling, add the egg noodles. Reduce the heat to a simmer and cook for 10 minutes, or until the noodles are tender and fully cooked through.
- Serve: Remove the soup from heat and ladle into bowls. Enjoy warm for a cozy meal.
Notes
- To store: cool the soup to room temperature, then transfer to an airtight container. Refrigerate for up to 3 days or freeze for up to 3 months.
- Adjust salt and pepper to taste before serving if needed.
- Using rotisserie chicken saves time and adds great flavor, but you can substitute with cooked shredded chicken breast.
