Description

Easy Chicken Noodle Soup is a comforting and quick 30-minute dinner featuring tender carrots, celery, juicy rotisserie chicken, and perfectly cooked egg noodles in a flavorful broth. This classic American soup is ideal for a cozy meal that the whole family will enjoy.

Ingredients

Soup Base

  • 3 Tablespoons salted butter
  • ½ onion, chopped
  • 2 cups chopped carrots
  • 2 cups chopped celery (about 6 ribs)

Chicken & Seasonings

  • 2 cups chopped rotisserie chicken
  • 1½ teaspoon garlic powder
  • 2 teaspoons chicken bouillon
  • ½ teaspoon ground pepper
  • ½ teaspoon dried thyme

Liquids & Noodles

  • 4 cups chicken broth
  • 3 cups water
  • 2 cups egg noodles

Instructions

  1. Sauté aromatics and vegetables: In a pot over medium heat, melt the butter. Add chopped onion, carrots, and celery. Sauté for 8-10 minutes, stirring occasionally, until the vegetables are tender and fragrant.
  2. Add chicken and seasonings: Stir in the chopped rotisserie chicken, garlic powder, chicken bouillon, ground pepper, and dried thyme. Mix everything thoroughly to combine the flavors.
  3. Pour in liquids and bring to boil: Add the chicken broth and water to the pot. Stir well, then bring the mixture to a gentle boil over medium-high heat.
  4. Cook the noodles: Once boiling, add the egg noodles. Reduce the heat to a simmer and cook for 10 minutes, or until the noodles are tender and fully cooked through.
  5. Serve: Remove the soup from heat and ladle into bowls. Enjoy warm for a cozy meal.

Notes

  • To store: cool the soup to room temperature, then transfer to an airtight container. Refrigerate for up to 3 days or freeze for up to 3 months.
  • Adjust salt and pepper to taste before serving if needed.
  • Using rotisserie chicken saves time and adds great flavor, but you can substitute with cooked shredded chicken breast.
