Description

These Dole Whip Popsicles blend tropical pineapple with creamy coconut milk or heavy cream for a refreshing, Disney-inspired summer treat that’s naturally gluten-free and easily dairy-free.


Ingredients

  • 2 cups frozen pineapple chunks (or canned crushed pineapple with juice)
  • 1 cup full-fat canned coconut milk (or heavy whipping cream)
  • 23 tablespoons maple syrup, honey, or sweetened condensed milk (to taste)
  • Optional: 1 teaspoon vanilla extract or 1 tablespoon lime juice

Instructions

  1. In a blender, combine the pineapple, coconut milk (or cream), and sweetener of choice.
  2. Blend until smooth and creamy. Add more liquid if needed for blending.
  3. Taste and adjust the sweetness. Add vanilla extract or lime juice if desired.
  4. Pour the mixture into popsicle molds, insert sticks, and freeze for 4–6 hours or until firm.
  5. To unmold, run molds under cool water briefly and gently wiggle popsicles free.

Notes

  • Use ripe fresh pineapple and freeze the puree for a fresher taste (texture may be icier).
  • For a vegan version, use only coconut milk and pineapple.
  • Store individually wrapped in the freezer for up to 3 months.
  • Without molds, use paper cups and foil to hold sticks in place while freezing.
