- 1 cup full-fat canned coconut milk (or heavy whipping cream)
- 2–3 tablespoons maple syrup, honey, or sweetened condensed milk (to taste)
- Optional: 1 teaspoon vanilla extract or 1 tablespoon lime juice
Instructions
- In a blender, combine the pineapple, coconut milk (or cream), and sweetener of choice.
- Blend until smooth and creamy. Add more liquid if needed for blending.
- Taste and adjust the sweetness. Add vanilla extract or lime juice if desired.
- Pour the mixture into popsicle molds, insert sticks, and freeze for 4–6 hours or until firm.
- To unmold, run molds under cool water briefly and gently wiggle popsicles free.
Notes
- Use ripe fresh pineapple and freeze the puree for a fresher taste (texture may be icier).
- For a vegan version, use only coconut milk and pineapple.
- Store individually wrapped in the freezer for up to 3 months.
- Without molds, use paper cups and foil to hold sticks in place while freezing.
