Description

Light and fluffy peach fritters featuring juicy fresh peaches, lightly fried until golden and dusted with powdered sugar—perfect for a summer treat.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups ripe fresh peaches, peeled and chopped
  • Oil for frying
  • Powdered sugar for dusting

Instructions

  1. In a bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, beat the egg, then stir in the milk and vanilla extract.
  3. Combine the wet ingredients with the dry until just mixed.
  4. Gently fold in the chopped peaches.
  5. Heat oil in a deep skillet or pot to around 350 °F (175 °C).
  6. Carefully drop spoonfuls of batter into the hot oil, frying until golden brown on each side, about 2–3 minutes per side.
  7. Use a slotted spoon to transfer fritters to a paper towel–lined plate to drain.
  8. While still warm, dust them generously with powdered sugar.

Notes

  • Do not overmix the batter to keep fritters light and tender.
  • Use semi-firm ripe peaches for best texture and flavor.
  • Fry in small batches to maintain oil temperature.
