Description
Light and fluffy peach fritters featuring juicy fresh peaches, lightly fried until golden and dusted with powdered sugar—perfect for a summer treat.
Ingredients
- 1 1/2 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup milk
- 1 large egg
- 1 tsp vanilla extract
- 1 1/2 cups ripe fresh peaches, peeled and chopped
- Oil for frying
- Powdered sugar for dusting
Instructions
- In a bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, beat the egg, then stir in the milk and vanilla extract.
- Combine the wet ingredients with the dry until just mixed.
- Gently fold in the chopped peaches.
- Heat oil in a deep skillet or pot to around 350 °F (175 °C).
- Carefully drop spoonfuls of batter into the hot oil, frying until golden brown on each side, about 2–3 minutes per side.
- Use a slotted spoon to transfer fritters to a paper towel–lined plate to drain.
- While still warm, dust them generously with powdered sugar.
Notes
- Do not overmix the batter to keep fritters light and tender.
- Use semi-firm ripe peaches for best texture and flavor.
- Fry in small batches to maintain oil temperature.
- Try adding cinnamon or nutmeg for a flavor twist.
- Best enjoyed fresh but can be stored and reheated.
