Description
A slow-cooked delight—tender, flavorful steak bites simmered in a rich au jus gravy, perfect for serving over mashed potatoes or noodles.
Ingredients
- 3 lb sirloin steak, cut into ~1″ bite-sized pieces
- 2 tsp kosher salt
- 1 tsp black pepper
- 2 Tbsp vegetable oil
- 1 small sweet onion, thinly sliced
- 3 cloves garlic, thinly sliced
- 1 cup unsalted beef stock
- 1 oz packet au jus gravy mix
- 4 Tbsp unsalted butter, thinly sliced
- Fresh chopped parsley for garnish (optional)
Instructions
- Season the steak cubes with salt and pepper in a large bowl.
- Heat half the oil in a skillet over medium-high and sear the steak in batches until browned—transfer to the crockpot.
- Add sliced onion and garlic to the crockpot, gently tossing with the steak.
- Pour in beef stock, sprinkle au jus mix over the top, and lay butter slices on top.
- Cover and cook on High for 3–4 hours or Low for 6–8 hours, stirring occasionally if possible.
- Garnish with parsley and serve warm over mashed potatoes or egg noodles.
Notes
- Skip searing for a true dump-and-go version—still tasty but deeper flavor if seared.
- Swap in round steak, stew meat, or chuck roast—all work beautifully.
- Stir in fresh thyme, rosemary, or red pepper flakes before cooking.
- Add seared mushrooms just before serving for depth.
- Use cream of mushroom soup instead of au jus for a richer gravy.
- Make it keto by skipping au jus and boosting with butter and herbs.
