Description

A slow-cooked delight—tender, flavorful steak bites simmered in a rich au jus gravy, perfect for serving over mashed potatoes or noodles.


Ingredients

  • 3 lb sirloin steak, cut into ~1″ bite-sized pieces
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 2 Tbsp vegetable oil
  • 1 small sweet onion, thinly sliced
  • 3 cloves garlic, thinly sliced
  • 1 cup unsalted beef stock
  • 1 oz packet au jus gravy mix
  • 4 Tbsp unsalted butter, thinly sliced
  • Fresh chopped parsley for garnish (optional)

Instructions

  1. Season the steak cubes with salt and pepper in a large bowl.
  2. Heat half the oil in a skillet over medium-high and sear the steak in batches until browned—transfer to the crockpot.
  3. Add sliced onion and garlic to the crockpot, gently tossing with the steak.
  4. Pour in beef stock, sprinkle au jus mix over the top, and lay butter slices on top.
  5. Cover and cook on High for 3–4 hours or Low for 6–8 hours, stirring occasionally if possible.
  6. Garnish with parsley and serve warm over mashed potatoes or egg noodles.

Notes

  • Skip searing for a true dump-and-go version—still tasty but deeper flavor if seared.
  • Swap in round steak, stew meat, or chuck roast—all work beautifully.
  • Stir in fresh thyme, rosemary, or red pepper flakes before cooking.
  • Add seared mushrooms just before serving for depth.
  • Use cream of mushroom soup instead of au jus for a richer gravy.
  • Make it keto by skipping au jus and boosting with butter and herbs.
