Description

Savory crockpot meatballs in a French onion‑flavored broth, finished with melted mozzarella.

Ingredients

  • 1 pound ground beef
  • ½ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 1 egg
  • 1 onion, finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups beef broth
  • 1 packet French onion soup mix
  • 1 cup shredded mozzarella cheese

Instructions

  1. In a large mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, chopped onion, garlic powder, salt, and pepper.
  2. Form the mixture into meatballs about 1–1.5 inches in diameter.
  3. Place the meatballs into the crockpot (layer if needed).
  4. In a separate bowl, whisk together beef broth and French onion soup mix. Pour this over the meatballs, ensuring they are submerged.
  5. Cover and cook on **low** for 6–8 hours or **high** for 3–4 hours.
  6. About 15 minutes before serving, sprinkle shredded mozzarella cheese on top, cover, and allow it to melt.

Notes

  • Serve with crusty bread to soak up the broth.
  • Adjust seasonings (salt, pepper) to taste.
  • Can be made ahead and frozen; thaw before reheating.
