Description

Crockpot Beef Tips and Noodles is a hearty and comforting dish featuring tender beef tips simmered in a flavorful gravy, served over soft egg noodles. It’s an easy, slow cooker meal perfect for busy weeknights.

Ingredients

  • 2 pounds stew beef or beef tips, cut into bite-sized pieces
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 packet onion soup mix
  • 2 tablespoons cornstarch (optional, for thickening)
  • Salt and pepper, to taste
  • 12 oz egg noodles, cooked separately

Instructions

  1. Add the beef tips to the bottom of the crockpot.
  2. Sprinkle the chopped onion and minced garlic over the meat.
  3. Pour in the beef broth, Worcestershire sauce, cream of mushroom soup, and onion soup mix. Stir to combine.
  4. Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender.
  5. If thicker gravy is desired, mix cornstarch with a bit of cold water and stir into the crockpot 30 minutes before serving.
  6. Cook the egg noodles separately according to package instructions.
  7. Serve the beef tips and gravy over the cooked egg noodles.

Notes

  • Use chuck roast or sirloin as alternatives to stew beef.
  • Try different cream soups like celery or onion for varied flavor.
  • Sear the beef before slow cooking for deeper flavor.
  • Add vegetables like mushrooms or peas during the last hour of cooking.
  • Can be served over mashed potatoes or rice instead of noodles.
