Description

This crispy fried cod fish sandwich combines golden-brown, flaky cod fillets with tangy homemade slaw and soft buns, offering a satisfying seafood meal perfect for lunch or dinner.


Ingredients

  • 4 cod fillets
  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1 tsp baking powder
  • Salt and pepper to taste
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne pepper (optional)
  • 2 eggs
  • 1/2 cup milk
  • Vegetable oil (for frying)
  • 4 burger buns
  • Lettuce leaves
  • Tomato slices
  • Dill pickles
  • 1 cup shredded cabbage
  • 1/4 cup mayonnaise
  • 1 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • 1 tbsp chopped capers
  • 1 tbsp chopped fresh parsley

Instructions

  1. In a bowl, mix shredded cabbage, mayonnaise, lemon juice, Dijon mustard, chopped capers, and parsley. Season with salt and pepper and set aside.
  2. Set up the breading station: combine flour, cornmeal, baking powder, salt, pepper, paprika, garlic powder, onion powder, and cayenne pepper in one bowl. In another, whisk eggs and milk.
  3. Pat cod fillets dry. Dip each fillet into the egg mixture, then dredge in the flour mixture, pressing gently to coat.
  4. Heat vegetable oil to 350°F (175°C). Fry the breaded cod for 3-4 minutes per side until golden and cooked through. Drain on a wire rack or paper towels.
  5. Toast burger buns. Spread slaw on the bottom bun, top with fried cod, lettuce, tomato, and pickles. Close with the top bun and serve.
