This crispy fried cod fish sandwich combines golden-brown, flaky cod fillets with tangy homemade slaw and soft buns, offering a satisfying seafood meal perfect for lunch or dinner.
Ingredients
- 4 cod fillets
- 1 cup all-purpose flour
- 1/2 cup cornmeal
- 1 tsp baking powder
- Salt and pepper to taste
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp cayenne pepper (optional)
- 2 eggs
- 1/2 cup milk
- Vegetable oil (for frying)
- 4 burger buns
- Lettuce leaves
- Tomato slices
- Dill pickles
- 1 cup shredded cabbage
- 1/4 cup mayonnaise
- 1 tbsp lemon juice
- 1 tbsp Dijon mustard
- 1 tbsp chopped capers
- 1 tbsp chopped fresh parsley
Instructions
- In a bowl, mix shredded cabbage, mayonnaise, lemon juice, Dijon mustard, chopped capers, and parsley. Season with salt and pepper and set aside.
- Set up the breading station: combine flour, cornmeal, baking powder, salt, pepper, paprika, garlic powder, onion powder, and cayenne pepper in one bowl. In another, whisk eggs and milk.
- Pat cod fillets dry. Dip each fillet into the egg mixture, then dredge in the flour mixture, pressing gently to coat.
- Heat vegetable oil to 350°F (175°C). Fry the breaded cod for 3-4 minutes per side until golden and cooked through. Drain on a wire rack or paper towels.
- Toast burger buns. Spread slaw on the bottom bun, top with fried cod, lettuce, tomato, and pickles. Close with the top bun and serve.
