Description

Ingredients

  • 3 large russet potatoes, peeled and cubed
  • 1 cup sweet corn kernels (fresh, frozen, or canned)
  • 1 cup sharp cheddar cheese, grated
  • 2 eggs
  • 1/4 cup flour
  • 1/4 cup breadcrumbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Vegetable oil, for frying

Instructions

  1. Boil the potatoes in salted water until fork-tender, about 10-12 minutes.
  2. Drain and mash the potatoes, setting them aside to cool.
  3. In a mixing bowl, combine mashed potatoes, sweet corn, cheddar cheese, eggs, flour, breadcrumbs, garlic powder, onion powder, salt, and pepper. Mix until dough-like.
  4. Heat oil in a frying pan over medium heat.
  5. Scoop tablespoon-sized portions of the mixture and form small patties.
