Description

Creamy Smothered Chicken and Rice is the ultimate one-pan comfort food! Made with juicy chicken breasts, fluffy rice, cheddar cheese, and a rich ranch-infused cream sauce, this cozy dish is perfect for easy weeknight dinners or hearty family meals.

Ingredients

  • 4 boneless, skinless chicken breasts

  • 1 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • Salt and pepper to taste

  • 1 cup long-grain white rice

  • 2 cups chicken broth

  • 1 cup heavy cream

  • 1 cup shredded cheddar cheese

  • 1/2 cup sour cream

  • 1 packet ranch seasoning mix
  • 1/2 tsp paprika

  • 1/2 tsp dried thyme

  • 1/2 cup chopped green onions (for garnish)

Instructions

  1. Sear Chicken: Heat olive oil in a skillet over medium-high heat. Season chicken with garlic powder, onion powder, salt, and pepper. Sear both sides for 3–4 minutes until golden brown. Remove and set aside.
  2. Cook Rice: In the same skillet, stir in rice, chicken broth, paprika, and thyme.
  3. Simmer: Return chicken to the pan. Cover and simmer on low for 15–20 minutes, until rice is tender and chicken is fully cooked.
  4. Make It Creamy: Stir in heavy cream, cheddar, sour cream, and ranch mix. Cook for 5 minutes until cheese melts and sauce thickens.
  5. Garnish & Serve: Top with chopped green onions and serve hot.

Notes

  • For a cheesier twist, add mozzarella or Monterey Jack.
  • To spice it up, toss in cayenne or diced jalapeños.
  • Sneak in nutrition with mushrooms, bell peppers, or spinach.
  • Reheat gently with added broth or milk to maintain creaminess.
