Ingredients

  • Beef tips or stew meat
  • Sliced mushrooms (fresh or canned)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can cream of mushroom soup
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • ½ cup sour cream
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons olive oil

Instructions

  1. Season beef tips with salt and black pepper.
  2. Heat olive oil in a skillet over medium-high heat; sear beef until browned on all sides.
  3. Transfer beef to the crockpot.
  4. In the same skillet, sauté onions, garlic, and mushrooms until softened. Add to crockpot.
  5. Pour beef broth, Worcestershire sauce, and cream of mushroom soup into the crockpot; stir to combine.
  6. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until beef is tender.
  7. Stir in sour cream just before serving for a creamy finish.
  8. Serve hot over rice, mashed potatoes, or egg noodles.

Notes

  • Add carrots or peas during the last hour for extra texture and color.
  • Swap sour cream with Greek yogurt for a lighter version.
  • To thicken the sauce, mix 1 tablespoon cornstarch with 2 tablespoons water and stir in 30 minutes before serving.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
