Ingredients

Egg Mixture

  • 8 large eggs
  • 1 cup cottage cheese (2% fat recommended)
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Herbs

  • 1/2 cup fresh basil, finely chopped


Instructions

  1. Preheat Oven and Prepare Muffin Tin: Preheat your oven to 350°F (175°C). Line a muffin tin with parchment paper liners to prevent sticking and set aside.
  2. Blend Egg Mixture: In a blender or food processor, combine the eggs, cottage cheese, salt, and black pepper. Blend the ingredients until the mixture is completely smooth and creamy. Then add the finely chopped fresh basil and pulse the blender a few times to evenly distribute the herb throughout the mixture.
  3. Pour and Bake: Pour the blended egg mixture evenly into the prepared muffin tin cups. Bake in the preheated oven for 25-28 minutes, or until a toothpick inserted into the center of the middle egg bite comes out clean. The egg bites should be slightly golden on top and have puffed up.
