Ingredients
Pasta
- 8 oz pasta
Sauce
- 1 cup full fat / whole milk cottage cheese
- 3/4 cup whole milk
- 1/2 cup shredded parmesan cheese
- 1 tsp cornstarch
- 1 tsp garlic powder
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- Salt, to taste
- Black pepper, to taste
Instructions
- Cook Pasta: Cook the pasta according to the package directions until al dente. Once cooked, drain and set aside.
- Blend Sauce Ingredients: In a blender, combine the cottage cheese, whole milk, parmesan cheese, cornstarch, garlic powder, dried oregano, and dried basil. Blend until the mixture is completely smooth and creamy.
- Heat Sauce: Pour the blended cottage cheese mixture into a large pan and warm over low heat on the stovetop. Stir gently and heat slowly for about 5 minutes until the sauce is warmed through and reaches your desired temperature.
- Toss Pasta with Sauce: Add the cooked pasta to the pan with the Alfredo sauce. Toss well to combine so the pasta is evenly coated with the creamy sauce. Season with salt and black pepper to taste.
- Serve: Plate the pasta and optionally top with extra fresh parmesan cheese, chopped fresh parsley, and cracked black pepper for an added burst of flavor. Enjoy immediately.
Notes
- Use full-fat cottage cheese for creamier texture and richer flavor.
- For a lighter version, substitute whole milk with low-fat milk but expect a slightly thinner sauce.
- Cornstarch helps thicken the sauce; ensure it’s fully blended for a smooth consistency.
- Feel free to add cooked vegetables or grilled chicken for added protein and nutrients.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated gently on the stove.
