Description
These Cinnamon Roll French Toast Bites are a quick and cozy breakfast made with chopped cinnamon rolls, dipped in a sweet egg mixture, pan-fried until golden, and tossed in cinnamon sugar. Finished with a luscious cream cheese glaze, they’re a fun, indulgent treat perfect for brunch, holidays, or a sweet weekend morning.
Ingredients
- For the French toast bites:
- 1 can refrigerated cinnamon rolls (with icing packet)
- 2 large eggs
- ¼ cup milk
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- 2 tablespoons butter (for cooking)
- For the cinnamon sugar coating:
- ½ cup granulated sugar
- 2 tablespoons ground cinnamon
- For the cream cheese glaze (optional):
- 4 oz cream cheese, softened
- 1 cup powdered sugar
- 2–3 tablespoons milk
- ½ teaspoon vanilla extract
Instructions
- Open the cinnamon rolls and set aside the icing. Cut each roll into 4 bite-sized pieces.
- In a bowl, whisk eggs, milk, vanilla, and cinnamon.
- Dip each cinnamon roll piece briefly into the egg mixture, letting the excess drip off.
- Heat 1 tablespoon of butter in a skillet over medium heat. Cook bites in batches, 2–3 minutes per side until golden and cooked through. Add more butter as needed.
- Mix sugar and cinnamon in a bowl. Toss hot bites in the cinnamon sugar coating.
- For the glaze, beat cream cheese with powdered sugar, milk, and vanilla until smooth. Drizzle over warm bites and serve immediately.
Notes
- Use maple syrup or caramel instead of the glaze for a faster topping.
- Add mini chocolate chips or chopped nuts to mix things up.
- Serve with fresh fruit for balance—bananas or berries work great.
- Bake option: place dipped pieces on a baking sheet and bake at 350°F (175°C) for 12–15 minutes.
