Description

These Cinnamon Roll French Toast Bites are a quick and cozy breakfast made with chopped cinnamon rolls, dipped in a sweet egg mixture, pan-fried until golden, and tossed in cinnamon sugar. Finished with a luscious cream cheese glaze, they’re a fun, indulgent treat perfect for brunch, holidays, or a sweet weekend morning.

Ingredients

  • For the French toast bites:
  • 1 can refrigerated cinnamon rolls (with icing packet)
  • 2 large eggs
  • ¼ cup milk
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • 2 tablespoons butter (for cooking)
  • For the cinnamon sugar coating:
  • ½ cup granulated sugar
  • 2 tablespoons ground cinnamon
  • For the cream cheese glaze (optional):
  • 4 oz cream cheese, softened
  • 1 cup powdered sugar
  • 23 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  1. Open the cinnamon rolls and set aside the icing. Cut each roll into 4 bite-sized pieces.
  2. In a bowl, whisk eggs, milk, vanilla, and cinnamon.
  3. Dip each cinnamon roll piece briefly into the egg mixture, letting the excess drip off.
  4. Heat 1 tablespoon of butter in a skillet over medium heat. Cook bites in batches, 2–3 minutes per side until golden and cooked through. Add more butter as needed.
  5. Mix sugar and cinnamon in a bowl. Toss hot bites in the cinnamon sugar coating.
  6. For the glaze, beat cream cheese with powdered sugar, milk, and vanilla until smooth. Drizzle over warm bites and serve immediately.

Notes

  • Use maple syrup or caramel instead of the glaze for a faster topping.
  • Add mini chocolate chips or chopped nuts to mix things up.
  • Serve with fresh fruit for balance—bananas or berries work great.
  • Bake option: place dipped pieces on a baking sheet and bake at 350°F (175°C) for 12–15 minutes.
