Description

A delightful breakfast treat that combines churros and French toast, filled with a creamy churro filling and coated in cinnamon sugar.


Ingredients

  • 8 slices of thick-cut brioche bread
  • 4 large eggs
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons granulated sugar
  • Pinch of salt
  • Butter or oil for frying
  • 4 ounces cream cheese, softened
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. In a small bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  2. Spread a layer of the cream cheese mixture on one slice of brioche, then top with another slice to create a sandwich. Repeat this for all slices.
  3. In a shallow bowl, whisk together the eggs, whole milk, vanilla extract, ground cinnamon, granulated sugar, and a pinch of salt.
  4. In a large skillet or griddle, melt some butter or heat a little oil over medium heat.
  5. Dip each stuffed bread sandwich into the custard mixture, coating both sides, then place it on the hot skillet. Cook for about 2-3 minutes per side until golden brown and crispy.
  6. In a shallow dish, mix the granulated sugar and cinnamon.
  7. While still warm, roll or sprinkle the cooked French toast with the cinnamon sugar mixture.
  8. Slice, drizzle with syrup, and enjoy your crispy, churro-inspired French toast!

Notes

  • To prevent sogginess, use thick-cut brioche and avoid soaking the bread for too long.
  • If you prefer a different type of bread, challah, Texas toast, or thick-cut white bread work well.
  • You can make the sandwiches and custard ahead of time and store them in the fridge overnight.
  • Top with maple syrup, caramel, chocolate sauce, whipped cream, or fresh berries.
  • For an egg-free version, replace the eggs with 1 cup of milk and 2 tablespoons of cornstarch.
