Ingredients
- For the Crust:
- 1 1/2 cups chocolate cookie crumbs (about 20 cookies)
- 1/4 cup melted butter
- For the Cheesecake Layer:
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1 cup mini chocolate chips, divided
- For the Ganache Topping:
- 1 cup heavy cream
- 1 cup semi-sweet chocolate chips
Instructions
- Prepare the Crust: Combine cookie crumbs and melted butter. Press into an 8×8-inch pan lined with parchment paper. Chill.
- Make Filling: Beat cream cheese, sugar, and vanilla until smooth. Fold in 3/4 cup mini chocolate chips.
- Assemble Layer: Spread cheesecake mixture over chilled crust. Chill for 3-4 hours.
- Make Ganache: Simmer heavy cream, remove from heat, stir in chocolate chips until smooth.
- Top & Chill: Pour ganache over cheesecake, sprinkle remaining chips. Chill another 1-2 hours.
- Slice & Serve: Cut into bars with a clean, sharp knife. Serve chilled.

- For a gluten-free version, use GF cookies in the crust.
- Add nuts to the crust or swirl in fruit preserves for variations.
