Description

A bold and flavorful grilled flank steak marinated in chipotle peppers, lime juice, cilantro, and honey. Juicy, smoky, and perfect for cookouts or weeknight dinners.


Ingredients

  • 1/4 cup olive oil or vegetable oil
  • 1/4 cup fresh lime juice
  • 1/2 cup loosely packed cilantro leaves
  • 2 chipotle peppers in adobo sauce, chopped
  • 1 tablespoon adobo sauce
  • 1 tablespoon honey
  • 1 tablespoon white vinegar
  • 3 cloves garlic
  • 1 1/2 pounds flank steak
  • Salt and pepper to taste

Instructions

  1. Blend olive oil, lime juice, cilantro, chipotle peppers, adobo sauce, honey, white vinegar, and garlic until smooth.
  2. Place the flank steak in a large zip-top bag, pour the marinade over it, seal the bag, and refrigerate for at least 8 hours or overnight.
  3. Remove steak from fridge and let it come to room temperature for 30 minutes before grilling.
  4. Pour the leftover marinade into a saucepan, bring to a boil, and cook for 5 minutes to use as a sauce.
  5. Season steak with salt and pepper, then grill over medium-high heat for 6–8 minutes per side or until desired doneness.
  6. Drizzle the cooked marinade over the grilled steak and let it rest for 10 minutes.
  7. Slice thinly against the grain and serve.

Notes

  • Marinate the steak overnight for best results.
  • Boil the leftover marinade before using it as a sauce for safety.
  • Can substitute flank steak with skirt or hanger steak.
  • Steak can be cooked indoors using a cast-iron skillet or oven broiler.
  • Leftovers are great in tacos, wraps, or salads.
