Description
A bold and flavorful grilled flank steak marinated in chipotle peppers, lime juice, cilantro, and honey. Juicy, smoky, and perfect for cookouts or weeknight dinners.
Ingredients
- 1/4 cup olive oil or vegetable oil
- 1/4 cup fresh lime juice
- 1/2 cup loosely packed cilantro leaves
- 2 chipotle peppers in adobo sauce, chopped
- 1 tablespoon adobo sauce
- 1 tablespoon honey
- 1 tablespoon white vinegar
- 3 cloves garlic
- 1 1/2 pounds flank steak
- Salt and pepper to taste
Instructions
- Blend olive oil, lime juice, cilantro, chipotle peppers, adobo sauce, honey, white vinegar, and garlic until smooth.
- Place the flank steak in a large zip-top bag, pour the marinade over it, seal the bag, and refrigerate for at least 8 hours or overnight.
- Remove steak from fridge and let it come to room temperature for 30 minutes before grilling.
- Pour the leftover marinade into a saucepan, bring to a boil, and cook for 5 minutes to use as a sauce.
- Season steak with salt and pepper, then grill over medium-high heat for 6–8 minutes per side or until desired doneness.
- Drizzle the cooked marinade over the grilled steak and let it rest for 10 minutes.
- Slice thinly against the grain and serve.
Notes
- Marinate the steak overnight for best results.
- Boil the leftover marinade before using it as a sauce for safety.
- Can substitute flank steak with skirt or hanger steak.
- Steak can be cooked indoors using a cast-iron skillet or oven broiler.
- Leftovers are great in tacos, wraps, or salads.
