Description

Chicken Gloria is a creamy baked chicken dish made with a rich mushroom sauce and melty Monterey Jack cheese. This comforting, cheesy chicken recipe is a nostalgic favorite perfect for weeknight dinners or special family meals.

Ingredients

  • Boneless, skinless chicken breasts or thighs
  • All-purpose flour
  • Olive oil
  • Butter
  • Yellow onion
  • Garlic
  • White mushrooms
  • Chicken broth
  • Cream of mushroom soup (canned or homemade)
  • Monterey Jack cheese, shredded
  • Fresh parsley (optional, for garnish)
  • Salt
  • Black pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice chicken in half lengthwise for thinner cutlets. Season with salt and pepper, then dredge in flour.
  3. Heat olive oil and butter in a large skillet. Sear chicken on both sides until lightly golden. Remove and set aside.
  4. In the same skillet, sauté onions until soft. Add mushrooms and garlic; cook until tender.
  5. Pour in chicken broth and simmer briefly.
  6. Stir in cream of mushroom soup until smooth.
  7. Place seared chicken in a baking dish. Pour sauce over chicken and top with shredded cheese.
  8. Bake uncovered for 25 minutes, until cheese is bubbly and melted.
  9. Garnish with fresh parsley and serve.

Notes

  • Substitute cheese with mozzarella or Swiss for variety.
  • Use low-sodium broth and reduced-fat soup for a lighter version.
  • Add spinach for extra greens.
  • Leftovers keep for 3 days in the fridge; avoid freezing.
