Ingredients
- Boneless, skinless chicken breasts or thighs
- All-purpose flour
- Olive oil
- Butter
- Yellow onion
- Garlic
- White mushrooms
- Chicken broth
- Cream of mushroom soup (canned or homemade)
- Monterey Jack cheese, shredded
- Fresh parsley (optional, for garnish)
- Salt
- Black pepper
Instructions
- Preheat oven to 375°F (190°C).
- Slice chicken in half lengthwise for thinner cutlets. Season with salt and pepper, then dredge in flour.
- Heat olive oil and butter in a large skillet. Sear chicken on both sides until lightly golden. Remove and set aside.
- In the same skillet, sauté onions until soft. Add mushrooms and garlic; cook until tender.
- Pour in chicken broth and simmer briefly.
- Stir in cream of mushroom soup until smooth.
- Place seared chicken in a baking dish. Pour sauce over chicken and top with shredded cheese.
- Bake uncovered for 25 minutes, until cheese is bubbly and melted.
