Ingredients
Chicken
- 2 boneless skinless chicken breasts
- Salt and pepper to taste
- 1 tablespoon olive oil
Sandwich Fillings
- 1 avocado, sliced
- 4 slices cheese (Swiss, cheddar, or provolone)
- 1 small red onion, thinly sliced
- 1 tomato, sliced
Bread & Condiments
- 4 slices bread (sourdough, ciabatta, or choice)
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- Butter or olive oil for grilling
Instructions
- Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. Heat the olive oil in a skillet over medium-high heat. Cook the chicken breasts for about 6-7 minutes on each side, or until fully cooked through and no longer pink in the center. Remove from the skillet and let rest for a few minutes, then slice thinly.
- Prepare the Avocado and Cheese: Slice the avocado and set aside. Also prepare the cheese slices for assembling the sandwiches.
- Prepare the Bread: Spread a thin layer of mayonnaise and Dijon mustard on each slice of bread to add flavor and moisture.
- Assemble the Sandwiches: On two bread slices, layer the sliced chicken, avocado, and cheese. Add slices of red onion and tomato on top. Place the remaining bread slices on top, mayo side down, to complete the sandwiches.
- Grill the Sandwiches: Heat a skillet or grill pan over medium heat and add butter or olive oil. Place the sandwiches in the skillet and cook for 3-4 minutes per side, pressing gently with a spatula to help melt the cheese evenly and toast the bread until golden brown.
- Serve: Remove the sandwiches from the skillet and allow to cool slightly before slicing in half. Serve warm for best taste.
