Description

Cheesy Taco Pasta is a quick and flavorful one-pot dish that blends the zesty taste of tacos with the comfort of pasta, perfect for busy weeknights.

Ingredients

  • 8 oz rotini pasta
  • 1 pound ground beef
  • 1/2 cup water
  • 1 oz taco seasoning
  • 1 1/2 cups salsa
  • 2 cups shredded Mexican cheese blend (divided)

Instructions

  1. Cook the rotini pasta according to the package instructions. Drain and set aside.
  2. In a large pot, cook and crumble the ground beef over medium heat until fully cooked. Drain excess fat.
  3. Return the pot to the stove, add taco seasoning and water to the beef, and stir well to combine.
  4. Add the cooked pasta and salsa to the seasoned beef and mix thoroughly.
  5. Stir in 1 1/2 cups of the shredded cheese until melted and creamy.
  6. Remove the pot from heat, sprinkle the remaining 1/2 cup of cheese on top, and let it melt before serving.

  • For extra spice, add diced jalapeños or use spicy salsa.
  • Substitute ground beef with turkey, chicken, or plant-based meat for variation.
  • Add vegetables like bell peppers, onions, or corn to increase nutritional value.
