Description

Cheesy Hamburger Rice Casserole is a hearty, comforting one-pan meal featuring seasoned ground beef, fluffy rice, mixed vegetables, and melty cheese, perfect for busy weeknights or cozy family dinners.


Ingredients

  • 1 pound lean ground beef
  • 1 cup long-grain white rice, uncooked
  • 2 cups shredded cheddar cheese
  • 1 medium onion, finely chopped
  • 1 cup diced bell peppers (red, green, or yellow)
  • 2 cloves garlic, minced
  • 1 can (15 ounces) tomato sauce
  • 2 cups beef broth
  • 1 cup frozen peas and carrots mix
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon red pepper flakes (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Heat olive oil in a large skillet over medium heat and cook ground beef until browned. Drain any excess fat.
  3. Add chopped onion and bell peppers; sauté until tender, about 5 minutes. Stir in garlic and cook for 1 minute.
  4. Stir in uncooked rice, tomato sauce, beef broth, and Worcestershire sauce.
  5. Season with paprika, oregano, basil, red pepper flakes (if using), salt, and pepper. Bring to a boil.
  6. Reduce heat, cover, and simmer for 18–20 minutes until rice is tender and liquid absorbed.
  7. Stir in frozen peas and carrots and cook for about 5 minutes.
  8. Remove from heat and mix in half of the shredded cheese.
  9. Transfer to a greased baking dish and sprinkle remaining cheese on top.
  10. Bake uncovered for 15–20 minutes until cheese is melted and bubbly.
  11. Let the casserole rest for 5 minutes before serving.
