Ingredients

  • For the stuffing:
  • Butter
  • Garlic cloves, minced
  • Mushrooms, finely chopped
  • Parmesan cheese, grated
  • Fresh parsley, chopped
  • Salt and black pepper
  • For the chicken:
  • Boneless, skinless chicken breasts
  • Salt and black pepper
  • Olive oil
  • Mozzarella cheese, sliced

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a skillet, melt butter over medium heat. Add garlic and cook until fragrant.
  3. Add chopped mushrooms, season with salt and pepper, and sauté until soft and browned.
  4. Stir in Parmesan cheese and parsley, then set aside to cool.
  5. Season chicken breasts with salt and pepper. Slice a pocket into each breast.
