Description

This Buffalo Chicken Flatbread is a quick and flavorful dish combining spicy buffalo sauce, tender chicken, and creamy cheeses on a crispy flatbread crust. Perfect for game days or weeknight dinners.

Ingredients

  • 2 flatbreads (14.5 ounces total)
  • 2 teaspoons light olive oil
  • ½ cup buffalo wing sauce (more if desired)
  • 1½ cups diced cooked chicken (approximately ¾ pound)
  • 1 cup shredded mozzarella cheese
  • ⅓ cup blue cheese dressing
  • ⅓ cup sliced green onions (about 3 green onions)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Place the flatbreads on a parchment-lined sheet pan and lightly brush the edges with olive oil.
  3. Bake the flatbreads for 5 minutes until warmed and just starting to crisp.
  4. Remove from the oven and spread the buffalo sauce evenly over both flatbreads.
  5. Sprinkle the diced chicken and shredded mozzarella cheese on top.
  6. Drizzle with blue cheese dressing.
  7. Bake for an additional 12–15 minutes until the edges are slightly browned.
  8. For a golden top, place under the broiler on high for the last 1–2 minutes.
  9. Remove from the oven and sprinkle with sliced green onions and additional buffalo sauce and blue cheese dressing if desired.

Notes

  • Use rotisserie chicken for a quicker preparation.
  • Adjust the buffalo sauce amount to modify spice level.
  • Swap mozzarella with cheddar or blue cheese crumbles for variation.
  • Can substitute flatbread with naan or pizza crust.
  • Cool before storing and reheat in oven for best texture.
