Description

Buckeye Bars are a no-bake dessert made with a creamy peanut butter base topped with a rich chocolate ganache, offering a quick and satisfying treat reminiscent of the classic Buckeye candies.


Ingredients

  • 1 cup salted sweet cream butter, softened
  • 2 cups creamy peanut butter
  • 1 tsp pure vanilla extract
  • to 4 cups powdered sugar
  • 2 cups semi-sweet chocolate chips
  • 2 tbsp vegetable oil

Instructions

  1. Line a 9×13-inch baking dish with parchment paper.
  2. In a medium bowl, beat the softened butter until smooth.
  3. Add peanut butter and vanilla extract; mix until fully combined.
  4. Gradually stir in powdered sugar, one cup at a time, until the mixture is smooth and firm.
  5. Press the peanut butter mixture evenly into the prepared dish.
  6. In a microwave-safe bowl, combine chocolate chips and vegetable oil.
  7. Microwave in 30-second intervals, stirring each time, until fully melted and glossy.
  8. Pour the melted chocolate over the peanut butter layer and spread evenly.
  9. Let the bars set at room temperature for 45 minutes, then refrigerate for at least 1 hour before slicing.

Notes

  • Let bars sit at room temperature for 10–15 minutes before slicing to avoid chocolate cracking.
  • For variation, substitute almond or sunflower seed butter for peanut butter.
