Buckeye Bars are a no-bake dessert made with a creamy peanut butter base topped with a rich chocolate ganache, offering a quick and satisfying treat reminiscent of the classic Buckeye candies.
Ingredients
- 1 cup salted sweet cream butter, softened
- 2 cups creamy peanut butter
- 1 tsp pure vanilla extract
- 3½ to 4 cups powdered sugar
- 2 cups semi-sweet chocolate chips
- 2 tbsp vegetable oil
Instructions
- Line a 9×13-inch baking dish with parchment paper.
- In a medium bowl, beat the softened butter until smooth.
- Add peanut butter and vanilla extract; mix until fully combined.
- Gradually stir in powdered sugar, one cup at a time, until the mixture is smooth and firm.
- Press the peanut butter mixture evenly into the prepared dish.
- In a microwave-safe bowl, combine chocolate chips and vegetable oil.
- Microwave in 30-second intervals, stirring each time, until fully melted and glossy.
- Pour the melted chocolate over the peanut butter layer and spread evenly.
- Let the bars set at room temperature for 45 minutes, then refrigerate for at least 1 hour before slicing.
Notes
- Let bars sit at room temperature for 10–15 minutes before slicing to avoid chocolate cracking.
- For variation, substitute almond or sunflower seed butter for peanut butter.
- Top with flaky sea salt or mini M&Ms for a decorative and flavorful twist.
- Store in an airtight container in the fridge for up to one week or freeze for up to three months.
