Description

This Blueberry Peach Feta Salad is the ultimate summer salad—fresh, vibrant, and bursting with flavor. Sweet peaches, juicy blueberries, and salty feta combine with crisp greens and a tangy balsamic vinaigrette for a refreshing side or light meal. It’s colorful, easy to make, and perfect for warm weather entertaining or a healthy lunch.

Ingredients

  • Fresh peaches (sliced)
  • Fresh blueberries
  • Mixed salad greens (spinach, arugula, or spring mix)
  • Crumbled feta cheese
  • Red onion (thinly sliced, optional)
  • Candied pecans or walnuts (optional)
  • For the Dressing:
  • Olive oil
  • Balsamic vinegar or white balsamic vinegar
  • Honey or maple syrup
  • Dijon mustard
  • Salt
  • Black pepper

Instructions

  1. In a large bowl, combine mixed greens, peaches, blueberries, and red onion (if using).
  2. Sprinkle with crumbled feta and candied nuts.
  3. In a small jar, whisk together olive oil, vinegar, honey or maple syrup, Dijon mustard, salt, and pepper.
  4. Drizzle dressing over the salad just before serving.
  5. Toss gently and serve immediately.

Notes

  • Swap in nectarines or plums if peaches aren’t available.
  • Use goat cheese or blue cheese instead of feta for a different flavor.
  • Add grilled chicken or shrimp to make it a full meal.
  • For a nut-free version, use sunflower or pumpkin seeds.
  • Store ingredients separately if prepping ahead.
