Description

Blackberry Pistachio Dream Bars are a decadent multi-layered dessert featuring a buttery biscuit base, creamy pistachio and cream cheese layers, and a vibrant blackberry compote, topped with pistachios and fresh berries.


Ingredients

  • 1 cup crushed digestive biscuits
  • 1/4 cup unsalted butter, melted
  • 1 cup shelled pistachios, finely ground
  • 1/4 cup confectioners’ sugar
  • 1/4 cup heavy cream
  • 1 cup cream cheese, softened
  • 1/2 cup confectioners’ sugar
  • 1 teaspoon vanilla extract
  • 2 cups fresh blackberries
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 2 teaspoons cornstarch
  • 1/4 cup shelled pistachios, chopped
  • Fresh blackberries for garnish

Instructions

  1. Mix the crushed biscuits with melted butter and press the mixture into the bottom of a lined 8×8 inch baking pan. Chill for 20 minutes.
  2. Blend the ground pistachios with confectioners’ sugar and heavy cream until smooth. Spread over the biscuit base and chill for another 20 minutes.
  3. Beat the cream cheese with confectioners’ sugar and vanilla until creamy. Spread over the pistachio layer and chill again.
  4. In a saucepan over medium heat, cook the blackberries, granulated sugar, lemon juice, and cornstarch until thickened. Cool slightly, then spread over the cream cheese layer and chill until set.
  5. Sprinkle chopped pistachios on top and garnish with fresh blackberries before serving.

Notes

  • Use thawed and drained frozen blackberries if fresh are unavailable.
  • Graham crackers can substitute digestive biscuits.
  • To make it vegan, use plant-based cream cheese, butter, and dairy-free cream.
  • Ensure each layer is well-chilled before adding the next to maintain clean layers.
