- 2 large eggs
- 1/4 cup unsalted butter, melted
- 1 tsp vanilla extract
- 2 medium apples, peeled, cored, and diced
- 1/2 tsp ground cinnamon (for apples)
- 1 cup powdered sugar (for glaze)
- 2–3 tbsp milk (for glaze)
- 1/2 tsp vanilla extract (for glaze)
Instructions

- Using a spoon or small ice-cream scoop, drop batter onto a parchment-lined baking sheet in rustic shapes.
- Bake in a preheated oven at 200°C (400°F) for 15–18 minutes or until golden and a toothpick inserted comes out clean.
- Whisk powdered sugar, 2–3 tbsp milk, and 1/2 tsp vanilla extract to make the glaze.
- Drizzle or dunk warm fritters in the glaze and let set before serving.
Notes
- Add chopped pecans or walnuts for crunch.
