Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 2/3 cup milk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 2 medium apples, peeled, cored, and diced
  • 1/2 tsp ground cinnamon (for apples)
  • 1 cup powdered sugar (for glaze)
  • 23 tbsp milk (for glaze)
  • 1/2 tsp vanilla extract (for glaze)

Instructions

  1. Peel, core, and dice the apples. Toss them with 1/2 tsp ground cinnamon.
  2. In a large bowl, whisk together flour, granulated sugar, baking powder, 1 tsp cinnamon, and salt.
  3. In another bowl, whisk together milk, eggs, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the cinnamon-coated apples.
  5. Using a spoon or small ice-cream scoop, drop batter onto a parchment-lined baking sheet in rustic shapes.
  6. Bake in a preheated oven at 200°C (400°F) for 15–18 minutes or until golden and a toothpick inserted comes out clean.
  7. Whisk powdered sugar, 2–3 tbsp milk, and 1/2 tsp vanilla extract to make the glaze.
  8. Drizzle or dunk warm fritters in the glaze and let set before serving.
