Description

BBQ Chicken Quesadillas are a quick and delicious twist on traditional quesadillas, filled with smoky BBQ chicken, melted cheese, and crispy tortillas. Perfect for lunch, dinner, or a satisfying snack.


Ingredients

  • 2 cups shredded cooked chicken
  • 1/2 cup BBQ sauce
  • 1 1/2 cups shredded mozzarella or cheddar cheese (or a blend)
  • 4 large flour tortillas
  • 2 tbsp butter or oil (for grilling)
  • Optional: 1/4 cup sliced red onions
  • Optional: 1-2 jalapeños, sliced
  • Optional: Fresh cilantro, chopped

Instructions

  1. In a bowl, mix shredded chicken with BBQ sauce until well coated.
  2. Heat a skillet over medium heat and add butter or oil.
  3. Place one tortilla on the skillet and sprinkle cheese over half of it.
  4. Add a layer of BBQ chicken mixture and any optional toppings like red onion or jalapeños.
  5. Sprinkle more cheese on top and fold the tortilla over.
  6. Cook for 2-3 minutes on each side until golden and the cheese is melted.
  7. Remove from skillet, let sit for a minute, then slice into wedges.
