Ingredients
- 2 cups shredded cooked chicken
- 1/2 cup BBQ sauce
- 1 1/2 cups shredded mozzarella or cheddar cheese (or a blend)
- 4 large flour tortillas
- 2 tbsp butter or oil (for grilling)
- Optional: 1/4 cup sliced red onions
- Optional: 1-2 jalapeños, sliced
- Optional: Fresh cilantro, chopped
Instructions
- In a bowl, mix shredded chicken with BBQ sauce until well coated.
- Heat a skillet over medium heat and add butter or oil.
- Place one tortilla on the skillet and sprinkle cheese over half of it.
- Add a layer of BBQ chicken mixture and any optional toppings like red onion or jalapeños.
- Sprinkle more cheese on top and fold the tortilla over.
- Cook for 2-3 minutes on each side until golden and the cheese is melted.
- Remove from skillet, let sit for a minute, then slice into wedges.
Notes
- Use rotisserie chicken to save time.
- Don’t overfill to prevent quesadillas from falling apart.
- For a vegetarian option, use black beans and corn instead of chicken.
- Store leftovers in the fridge for up to 3 days or freeze individually.
