Ingredients
- 1 lb boneless, skinless chicken breast
- 1 cup cooked rice (white, brown, or cauliflower)
- 1 cup mixed vegetables (broccoli, bell peppers, carrots)
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/2 cup mayonnaise
- 2 tablespoons sriracha
- 1 tablespoon honey
- 1 teaspoon garlic powder
- 1 teaspoon lime juice
Instructions
- Cook the rice according to package instructions and set aside.
- Cut chicken breast into bite-sized pieces and season with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat, add chicken, and cook until golden and cooked through (6-8 minutes).
- Mix mayonnaise, sriracha, honey, garlic powder, and lime juice in a bowl to make the sauce.
- Add mixed vegetables to the skillet and cook for 2-3 minutes until just tender.
- Remove skillet from heat, pour sauce over the chicken and vegetables, and stir to coat evenly.
- Serve the mixture over rice and garnish with extra sriracha or green onions if desired.
Notes
- Adjust the heat level of the sauce by varying the amount of sriracha.
- Use shrimp or tofu as alternative proteins.
- Frozen vegetables can be used if thawed and drained properly.
- Store leftovers in an airtight container for up to 3 days.
