Description

A vibrant and easy-to-make dish featuring sautéed chicken, fresh vegetables, and a spicy-sweet bang bang sauce served over rice. Perfect for beginners and meal prepping.

Ingredients

  • 1 lb boneless, skinless chicken breast
  • 1 cup cooked rice (white, brown, or cauliflower)
  • 1 cup mixed vegetables (broccoli, bell peppers, carrots)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon lime juice

Instructions

  1. Cook the rice according to package instructions and set aside.
  2. Cut chicken breast into bite-sized pieces and season with salt and pepper.
  3. Heat olive oil in a large skillet over medium-high heat, add chicken, and cook until golden and cooked through (6-8 minutes).
  4. Mix mayonnaise, sriracha, honey, garlic powder, and lime juice in a bowl to make the sauce.
  5. Add mixed vegetables to the skillet and cook for 2-3 minutes until just tender.
  6. Remove skillet from heat, pour sauce over the chicken and vegetables, and stir to coat evenly.
  7. Serve the mixture over rice and garnish with extra sriracha or green onions if desired.

Notes

  • Adjust the heat level of the sauce by varying the amount of sriracha.
  • Use shrimp or tofu as alternative proteins.
  • Frozen vegetables can be used if thawed and drained properly.
  • Store leftovers in an airtight container for up to 3 days.
  • Reheat components separately for best texture and flavor.
