Description

Juicy baked chicken breasts coated in a sweet and tangy balsamic marinade, topped with fresh mozzarella, ripe tomatoes, and basil for a caprese-inspired dinner that’s both elegant and easy to prepare.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup balsamic vinegar
  • 2 tbsp honey or brown sugar
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried Italian herbs (or mix of oregano, thyme, basil)
  • Salt and pepper, to taste
  • 8 oz fresh mozzarella cheese, sliced
  • 2 medium tomatoes, sliced (Roma or vine-ripe)
  • Fresh basil leaves
  • Optional: balsamic glaze for drizzling

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, whisk together balsamic vinegar, honey (or brown sugar), olive oil, minced garlic, and dried herbs.
  3. Season chicken breasts with salt and pepper, then coat with the marinade.
  4. Marinate for at least 15 minutes (longer if time allows).
  5. Place chicken in a baking dish and bake uncovered for 20–25 minutes, or until the internal temperature reaches 165°F (74°C).
  6. Remove from oven and top each breast with mozzarella and tomato slices.
  7. Return to the oven for 5–7 minutes, until cheese is melted and bubbly.
  8. Garnish with fresh basil and drizzle with balsamic glaze if desired before serving.

  • Chicken thighs can be used instead of breasts.
