Ingredients
- 1 lb lean ground beef
- 8 medium flour tortillas
- 1 can refried beans
- 1 cup salsa (store-bought or homemade)
- 2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 packet taco seasoning (or homemade equivalent)
- 1 small onion, chopped
- 2 cloves garlic, minced
- Sour cream (for topping)
- Chopped cilantro (for garnish)
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet over medium heat, brown the ground beef.
- Add the chopped onion and minced garlic; sauté until fragrant.
- Stir in taco seasoning and ¼ cup water. Simmer until thickened.
- In a 9×13-inch casserole dish, spread a thin layer of salsa.
- Layer two tortillas on the bottom, then half the refried beans, half the beef mixture, and a sprinkle of cheese.
- Repeat the layers, finishing with tortillas topped with salsa and remaining cheese.
- Cover with foil and bake for 20 minutes. Remove foil and bake another 10 minutes until golden and bubbly.
- Garnish with chopped cilantro and serve with sour cream.
