Ingredients
- 4 boneless, skinless chicken breasts or thighs
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1/2 cup crumbled feta cheese
- 1/3 cup honey
- 1/2 teaspoon red pepper flakes (adjust to taste)
- 1 tablespoon apple cider vinegar
- Salt and black pepper to taste
- Fresh thyme or rosemary for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Season the chicken with salt and black pepper.
- In an oven-safe skillet, heat olive oil over medium-high heat and sear the chicken on both sides until golden, about 3-4 minutes per side.
- In a small saucepan, combine honey, red pepper flakes, and apple cider vinegar. Simmer gently for 2-3 minutes, then remove from heat.
- Sprinkle crumbled feta over the seared chicken in the skillet and drizzle with hot honey.
- Transfer the skillet to the oven and bake for 15-20 minutes, until the chicken is cooked through and feta is golden.
- Let the chicken rest for a few minutes, garnish with fresh thyme or rosemary if using, and serve.
Notes
- Adjust red pepper flakes to control the spice level.
- Substitute goat cheese for a milder flavor.
- Store leftovers in an airtight container in the fridge for up to 3 days.
- Reheat in the oven at 350°F for best texture.
- Use store-bought hot honey if short on time.
