Description
Tender, flaky biscuits infused with warm autumn spices and grated fresh apple, finished with a sweet honey butter glaze. Perfect for breakfast, brunch, or a cozy snack.
Ingredients
- 4 1/2 cups all-purpose flour, plus more for dusting
- 1 tablespoon plus 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 teaspoons sugar
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon ground cloves
- 1 cup cold butter
- 1/2 cup grated apple
- 1 cup chilled buttermilk
- 3 tablespoons unsalted butter (for glaze)
- 3 tablespoons honey (for glaze)
- Pinch of salt (for glaze)
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, whisk together the flour, baking powder, baking soda, sugar, salt, cinnamon, nutmeg, ginger, cardamom, and cloves.
- Cut in the cold butter and grated apple until the mixture resembles coarse crumbs.
- Gently stir in the chilled buttermilk until just combined. The dough will be sticky.
- Flour a work surface and your hands. Knead the dough a few times until it comes together.
- Pat the dough into a 1-inch thick oval. Fold short sides toward the center. Press out and repeat folding 7 times.
- Cut into 3- to 4-inch circles and place on an ungreased baking sheet or in cake pans.
- Bake for 20 minutes, or until golden brown.
- For the glaze, melt butter in a saucepan over medium heat, stir in honey and salt.
- Brush the biscuits with the honey butter glaze right after baking.
Notes
- Use apple pie spice as a substitute for individual spices.
- Try grated pear instead of apple for variation.
- Add vanilla or cinnamon to the glaze for a flavor twist.
- Store leftovers at room temperature for 2 days or refrigerated for 5 days.
- Reheat in oven at 350°F for 5-10 minutes or microwave for 15-20 seconds.
