Description

Tender, flaky biscuits infused with warm autumn spices and grated fresh apple, finished with a sweet honey butter glaze. Perfect for breakfast, brunch, or a cozy snack.


Ingredients

  • 4 1/2 cups all-purpose flour, plus more for dusting
  • 1 tablespoon plus 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • 1 cup cold butter
  • 1/2 cup grated apple
  • 1 cup chilled buttermilk
  • 3 tablespoons unsalted butter (for glaze)
  • 3 tablespoons honey (for glaze)
  • Pinch of salt (for glaze)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, whisk together the flour, baking powder, baking soda, sugar, salt, cinnamon, nutmeg, ginger, cardamom, and cloves.
  3. Cut in the cold butter and grated apple until the mixture resembles coarse crumbs.
  4. Gently stir in the chilled buttermilk until just combined. The dough will be sticky.
  5. Flour a work surface and your hands. Knead the dough a few times until it comes together.
  6. Pat the dough into a 1-inch thick oval. Fold short sides toward the center. Press out and repeat folding 7 times.
  7. Cut into 3- to 4-inch circles and place on an ungreased baking sheet or in cake pans.
  8. Bake for 20 minutes, or until golden brown.
  9. For the glaze, melt butter in a saucepan over medium heat, stir in honey and salt.
  10. Brush the biscuits with the honey butter glaze right after baking.

Notes

  • Use apple pie spice as a substitute for individual spices.
  • Try grated pear instead of apple for variation.
  • Add vanilla or cinnamon to the glaze for a flavor twist.
  • Store leftovers at room temperature for 2 days or refrigerated for 5 days.
