- 1/2 cup unsalted butter, cold and cut into small pieces
- 1/4 cup shortening
- 3/4 cup buttermilk
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and yeast.
- Cut in the cold butter and shortening until the mixture resembles small pea-sized pieces.
- Add the buttermilk and stir until just combined—be careful not to overmix.
- Transfer the dough to a floured surface and gently pat it out into a square about 1 inch thick. Fold it in half, pat it out again, and repeat the process until the dough is 1 inch thick.
- Using a 2-2 ¼ inch biscuit cutter, cut out biscuits and place them on a parchment-lined baking sheet or in a cast iron skillet.
- Cover and let the biscuits rest for 30 to 60 minutes.
- Brush the tops with melted butter and bake for 15-20 minutes or until golden brown.
- Once baked, brush with more melted butter and serve immediately.
