Description

A classic, vibrant fruit salad with marshmallows, coconut, and whipped topping, perfect for potlucks or as a refreshing dessert.

Ingredients

  • Mini marshmallows
  • Sweetened shredded coconut
  • Canned mandarin oranges (drained)
  • Pineapple chunks (fresh or canned, drained if canned)
  • Maraschino cherries (halved)
  • Whipped topping (or whipped cream)
  • Optional: sliced grapes, chopped apples, or chopped pecans

Instructions

  1. In a large bowl, combine the whipped topping and coconut until well blended.
  2. Gently fold in the marshmallows, mandarin oranges, pineapple chunks, and cherry halves until evenly coated.
  3. If desired, stir in grapes, apples, or chopped nuts for extra crunch or fruit variety.
  4. Cover the bowl and refrigerate for at least 1 hour to allow flavors to meld.
  5. Before serving, gently stir and garnish with additional cherries or a sprinkle of coconut on top.

Notes

  • Can be made ahead of time; refrigerate overnight and stir gently before serving.
  • Can be made dairy-free by using non-dairy whipped topping and skipping the cream cheese variation.
  • For extra crunch, add chopped walnuts or pecans.
  • If excess liquid collects, gently drain before serving.
