Quick and easy 5 Ingredient Beef Enchiladas made with seasoned ground beef, salsa, enchilada sauce, flour tortillas, and shredded cheese for a comforting, cheesy meal ready in under an hour.
Ingredients
- 1 pound lean ground beef
- 1 cup chunky salsa
- 1 (10-ounce) can red enchilada sauce
- 8 (8-inch) flour tortillas
- 1 (8-ounce) package shredded four cheese Mexican blend (about 2 cups)
Instructions
- Preheat the oven to 350°F (175°C) and lightly spray a 9×13-inch baking dish with nonstick cooking spray.
- In a large skillet, brown the ground beef over medium-high heat. Drain excess fat, return the meat to the skillet, stir in the chunky salsa, and cook until heated through. Remove from heat.
- Pour about half of the enchilada sauce into the bottom of the prepared baking dish.
- Warm the flour tortillas according to package directions. Spoon about 1/4 cup of the beef mixture down the center of each tortilla, then top with about 1 heaping tablespoon of shredded cheese. Roll each tortilla tightly and place seam side down in the baking dish.
- Pour the remaining enchilada sauce over the rolled tortillas and sprinkle the remaining cheese on top.
- Cover the dish tightly with aluminum foil and bake for 30 to 35 minutes.
Notes
- Swap ground beef for turkey or chicken for a lighter version.
- Add black beans, corn, or jalapeños for extra flavor and texture.
- Use corn tortillas if preferred, but flour tortillas stay softer.
- Top with fresh cilantro or sour cream after baking for freshness.
- Enchiladas can be assembled ahead of time and refrigerated before baking.
