Description

A quick and creamy 3-ingredient dip made with ground beef, Velveeta cheese, and Rotel tomatoes. Perfect for parties, game days, or snacking.

Ingredients

  • 1 lb ground beef
  • 1 10-ounce can Rotel tomatoes (undrained)
  • 16 ounces Velveeta cheese, cut into cubes

Instructions

  1. In a large pot over medium heat, cook the ground beef until browned and no longer pink. Drain any excess grease.
  2. Add the undrained can of Rotel and the cubed Velveeta cheese to the pot.
  3. Reduce heat to medium-low and stir frequently until everything is melted together and smooth.
  4. Transfer to a serving bowl and serve warm with chips, veggies, or your favorite dippers.

Notes

  • Swap ground beef with chicken, turkey, or spicy sausage for variation.
  • Try different tomato bases like salsa or diced tomatoes with green chiles.
  • Mix in extras like jalapeños, taco seasoning, or chopped herbs for more flavor.
  • Stretch with black beans or cooked rice for a heartier dip.
  • Store in the fridge up to 3–4 days; reheat with a splash of milk if needed.
