Description

This Overnight Blueberry French Toast Casserole is a delightful make-ahead breakfast or brunch dish that combines creamy layers of softened cream cheese and fresh blueberries with custardy baked French bread. The casserole is soaked overnight to develop rich flavors and baked to a golden brown, creating a comforting and crowd-pleasing meal.

Ingredients

Cream Cheese Mixture

  • 1 pack (8 ounces) softened cream cheese
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 tablespoon vanilla extract, divided

Fruit

  • 2 cups blueberries, divided

Bread and Custard

  • 2 loaves cubed French bread
  • 2 cups milk
  • 8 eggs
  • 1 teaspoon cinnamon powder
  • 1/2 teaspoon ground nutmeg

Instructions

  1. Prepare the Cream Cheese Mixture: In a medium bowl, beat the softened cream cheese, powdered sugar, 2 tablespoons milk, and half of the vanilla extract until smooth and creamy. Set aside.
  2. Layer the Bread: Cube the French bread and spread half of it evenly in a greased baking dish. Sprinkle with 1 cup of blueberries. Spread the cream cheese mixture evenly over the bread layer. Top with the remaining bread cubes and the remaining 1 cup of blueberries.
  3. Make the Custard: In a large bowl, whisk together 2 cups milk, 8 eggs, cinnamon powder, nutmeg, and the remaining half tablespoon of vanilla extract until well combined.
  4. Soak the Casserole: Pour the egg mixture evenly over the layered bread and cream cheese in the baking dish. Press down gently to help the bread absorb the custard. Cover with plastic wrap and refrigerate overnight, or for at least 8 hours.
  5. Bake: Preheat the oven to 350°F (175°C). Remove the casserole from the refrigerator and let it sit at room temperature while the oven heats. Bake uncovered for 45-55 minutes, or until the top is golden brown and the custard is set. Insert a knife into the center to test doneness; it should come out clean.
  6. Serve: Allow the casserole to cool for 5-10 minutes before serving. Optionally, dust with powdered sugar or drizzle with maple syrup and enjoy warm.

Notes

  • Use day-old or slightly stale French bread for better texture and absorption.
  • You can substitute blueberries with other berries like raspberries or strawberries.
  • For a richer casserole, substitute some milk with half-and-half or heavy cream.
  • This casserole can be assembled and refrigerated for up to 24 hours before baking.
  • Store leftovers covered in the refrigerator for up to 3 days and reheat gently.
