Description

Delight in the rich and refreshing flavors of Mint Chocolate Chip Brownies—a decadent chocolate brownie base topped with melted Andes candies and a luscious mint frosting speckled with mini chocolate chips. This dessert perfectly balances fudgy texture, minty freshness, and chocolatey goodness, making it a crowd-pleasing treat for any occasion.

Ingredients

Brownie Base

  • Cooking spray, for greasing pan
  • 1 box brownie mix, plus ingredients called for on box (typically eggs, oil, and water)
  • 28 Andes candies, plus more for garnish

Mint Chocolate Chip Frosting

  • 1/2 cup butter, softened
  • 2 1/2 cups powdered sugar
  • 1/2 teaspoon mint extract
  • 3 tablespoons milk
  • 6 drops green food coloring
  • 1/2 cup mini chocolate chips

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Line an 8-inch by 8-inch baking pan with parchment paper and grease it lightly with cooking spray to prevent sticking.
  2. Make Brownie Batter and Add Andes Candies: Prepare the brownie batter according to the package instructions. Pour the batter evenly into the prepared pan. Arrange 28 Andes candies in an even layer on top of the batter for a melty mint-chocolate topping.
  3. Bake the Brownies: Bake the brownies in the preheated oven for about 40 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs. Once done, remove from the oven and allow brownies to cool completely in the pan.
  4. Prepare Frosting: While the brownies cool, make the mint chocolate chip frosting. In a large mixing bowl, beat the softened butter with a hand mixer until light and fluffy. Gradually add powdered sugar, mint extract, milk, and green food coloring. Beat the mixture until smooth and creamy. Gently fold in the mini chocolate chips to add texture and extra chocolate flavor.
  5. Frost the Brownies and Garnish: Spread the prepared frosting evenly and thickly over the cooled brownies. Chop additional Andes candies and sprinkle on top as a decorative and flavorful garnish.
  6. Slice and Serve: Once frosted and garnished, slice the brownies into 16 equal squares. Serve and enjoy the combination of rich chocolate and refreshing mint in every bite.

Notes

  • Allow brownies to cool completely before frosting to prevent the frosting from melting.
  • Adjust green food coloring quantity to achieve your preferred shade of mint green.
  • You can substitute Andes candies with other mint chocolate candies if preferred.
  • Store brownies in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
  • For a gluten-free version, use a gluten-free brownie mix.
