  • 1/4 cup cream cheese, softened
  • 1 tablespoon olive oil
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Prepare the Pan and Warm Tortillas: Preheat a skillet or grill pan over medium heat and add olive oil. While the pan heats up, warm your low-carb tortillas for 10-15 seconds in the microwave covered with a damp paper towel to prevent cracking.
  2. Mix the Filling: In a large mixing bowl, combine the shredded chicken, mozzarella cheese, cheddar cheese, softened cream cheese, minced garlic, chopped parsley, salt, and pepper. If using baby spinach, add it now. Mix thoroughly until the cream cheese evenly coats all ingredients.
  3. Assemble the Wraps: Divide the chicken mixture evenly among the four warm tortillas, placing about 1/2 cup of filling in the center of each. Roll each tortilla tightly, tucking in the sides as you go to form secure wraps.
  4. Cook the Wraps: Place the wraps seam-side down in the preheated skillet. Cook for 2-3 minutes per side without moving them, allowing the wraps to turn golden brown and the cheese inside to melt and slightly ooze from the edges.
  5. Serve: Remove the wraps from the skillet and slice each one diagonally in half. Serve hot, garnished with extra chopped parsley if desired.
