Ingredients
Meat
- 1 lb lean ground beef
Vegetables
- 1 small cabbage head (coarsely chopped)
- 1 medium carrot (coarsely grated)
- 1 medium onion (chopped)
- 3 cloves garlic (minced)
Liquids & Sauces
- ⅔ cup tomato sauce
- 1 cup vegetable or beef stock
Oils & Fats
- 2 tablespoons coconut oil
Spices & Seasonings
- 1 tablespoon ground cumin (divided)
- 1 1/2 teaspoon paprika (divided)
- 1 teaspoon garlic powder (divided)
- 1 teaspoon oregano (divided)
- ½ teaspoon coriander (divided)
- Salt and black pepper to taste (divided)
Instructions
- Cook the Beef: Heat coconut oil in a large skillet over medium heat. Add the lean ground beef, season it with half of the ground cumin, paprika, garlic powder, oregano, coriander, salt, and black pepper. Cook the beef thoroughly until it is fully browned, breaking it apart as it cooks. Once browned, drain any excess fat from the skillet, then remove the beef from the pan and set it aside.
- Sauté Vegetables: In the same skillet, add the chopped onion and coarsely grated carrot. Sauté these vegetables for a couple of minutes over medium heat until they soften. Then stir in the minced garlic and cook for an additional 30 seconds to release its aroma.
- Make the Sauce: Pour in the tomato sauce and vegetable or beef stock into the skillet with the sautéed vegetables. Stir the mixture well and allow it to simmer for a few minutes, which helps to blend and deepen the flavors.
- Cook the Cabbage: Add the coarsely chopped cabbage to the skillet. Season it with the remaining half of the ground cumin, paprika, garlic powder, oregano, coriander, salt, and black pepper. Stir to combine all ingredients thoroughly. Cover the skillet with a lid, reduce the heat to low, and let it simmer gently. Stir occasionally while cooking until the cabbage is tender and has developed a golden brown color, which should take about 40 minutes.
- Finish and Serve: Return the cooked ground beef back into the skillet with the cabbage mixture. Stir to blend everything evenly and heat through. Optionally garnish with fresh parsley for color and added flavor. Serve the dish warm for a comforting meal.
