Ingredients
Meat
- 1 lb Smoked Sausage (or substitute with turkey sausage or vegetarian sausage)
Vegetables
- 2 medium Yukon Gold Potatoes (can be replaced with pre-cooked or frozen potatoes, or sweet potatoes)
- 2 medium Zucchini (or substitute with bell peppers or squash)
- 1 medium Onion (or substitute with carrots or mushrooms)
- 1 medium Red Bell Pepper
Seasonings & Oil
- 1 tsp Garlic Powder (or use fresh garlic if preferred)
- 1 tsp Onion Powder (omit for a milder flavor)
- 1 tsp Smoked Paprika (substitute with regular paprika and a touch of chili powder if needed)
- 1 tsp Black Pepper
- 1 tsp Salt
- 2 tbsp Oil (for cooking)
Instructions
- Preheat the Cooking Surface: Preheat a Blackstone griddle or a large skillet over medium-high heat for about 3-5 minutes to ensure even cooking. Add 1 tablespoon of oil and wait until it shimmers, indicating it’s hot enough for cooking.
- Cook the Potatoes: Add the sliced Yukon Gold potatoes to the hot oil and season with garlic powder, onion powder, smoked paprika, black pepper, and salt. Cook them for 10-12 minutes, stirring occasionally, until they become golden brown and crispy on the outside.
- Brown the Sausage: Push the cooked potatoes to one side of the griddle or skillet and add the remaining tablespoon of oil to the cleared space. Lay down the sliced smoked sausage and cook for about 5 minutes, allowing it to brown and develop a nice crust.
- Add the Vegetables: Add the chopped onion, red bell pepper, and zucchini to the pan. Stir all the ingredients together and cook for another 5-7 minutes, stirring occasionally, until the vegetables are tender yet retain a slight crispness.
- Adjust Seasoning and Serve: Taste the mixture and add more salt or black pepper if needed. Once seasoning is adjusted, remove from heat and transfer the stir fry to a serving plate. Garnish with fresh parsley if desired, and serve immediately for best flavor and texture.
Notes
- For a vegetarian version, substitute smoked sausage with vegetarian sausage or plant-based protein.
- You can swap Yukon Gold potatoes with sweet potatoes or pre-cooked frozen potatoes to save time.
- Adjust the spices according to your preference; omit onion powder for a milder taste.
- Fresh garlic can be used instead of garlic powder for a more robust flavor.
- Cook on a griddle for more space and even heat, but a large skillet works perfectly as well.
