Ingredients
- 8 oz (225 g) dark chocolate (at least 60% cocoa), finely chopped
- 1 cup (240 ml) heavy cream
Instructions
- Place the finely chopped dark chocolate in a heatproof bowl.
- Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer, without boiling.
- Pour the hot cream over the chopped chocolate and let it sit for 2–3 minutes to soften the chocolate.
- Gently stir the mixture from the center outward using a whisk or spatula until smooth and glossy.
- Let it cool slightly before using: it will be pourable when warm, spreadable as it cools, and firm when chilled.

- Use high-quality dark chocolate for the best flavor and texture.
- Adjust cream quantity to modify consistency: less cream for thicker ganache, more for thinner.
- Add flavorings like vanilla, liqueur, or sea salt for variation.
