Coating

  • 1 cup panko breadcrumbs
  • ½ cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • ¼ tsp salt

  • 6 chicken cutlets
  • ½ cup avocado oil
  • 1 24 oz jar marinara sauce
  • ½ cup shredded mozzarella
  • Fresh parsley or basil, for serving


Instructions

  1. Preheat the oven: Preheat your oven to 400°F (204°C) and lightly grease a baking dish or rimmed baking sheet to prepare for baking the chicken after frying.
  2. Make the marinade: In a shallow bowl, whisk together the eggs, grated garlic, chopped parsley, salt, and pepper. Dip each chicken cutlet into this mixture and place them in a shallow dish to marinate for 15 to 45 minutes, which helps keep the chicken juicy.
  3. Prepare the breadcrumb mixture: In another shallow bowl, combine panko breadcrumbs, regular breadcrumbs, grated Parmesan cheese, dried basil, dried oregano, garlic powder, and salt. This mixture creates the crispy, flavorful coating for the chicken.
