A rich and creamy caramel fudge that melts in your mouth, perfect for gifting or satisfying your sweet tooth.
Ingredients
- 2 cups granulated sugar
- 1 cup brown sugar, packed
- 1 cup heavy cream
- 1/2 cup unsalted butter
- 1/4 cup light corn syrup
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Line an 8×8-inch square baking pan with parchment paper and lightly grease it.
- In a heavy-bottomed saucepan, combine granulated sugar, brown sugar, cream, butter, corn syrup, and salt.
- Cook over medium heat, stirring constantly until the mixture comes to a boil.
- Continue cooking, stirring occasionally, until the mixture reaches 240°F (115°C) on a candy thermometer (soft-ball stage).
- Remove from heat and let it cool for 5 minutes.
- Stir in vanilla extract and beat the mixture with a wooden spoon until it thickens and loses its gloss.
- Pour into the prepared pan and smooth the top with a spatula.
- Allow to cool completely at room temperature, then cut into small squares.
Notes
- Store the fudge in an airtight container at room temperature for up to 2 weeks.
- For a salted caramel twist, sprinkle sea salt on top before cooling.
- Use a candy thermometer for best results to ensure proper texture.
