Description

Decadent chocolate covered strawberry brownies combining rich, fudgy brownie base with luscious chocolate ganache and fresh strawberries for a perfect dessert treat.

Ingredients

Brownies:

  • 1 cup (2 sticks) unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder

Topping:

  • 1 pint fresh strawberries, hulled and halved
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F (175°C) and grease or line a 9×13-inch baking pan with parchment paper for easy removal.
  2. Melt butter and mix sugar: In a medium saucepan, melt the unsalted butter over low heat. Remove from heat and stir in the granulated sugar until combined.
  3. Add eggs and vanilla: Beat in the eggs one at a time, fully incorporating each before adding the next. Stir in the vanilla extract for flavor.
  4. Combine dry ingredients: In a separate bowl, whisk together the all-purpose flour, unsweetened cocoa powder, salt, and baking powder.
  5. Mix dry and wet ingredients: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined, taking care not to overmix.
  6. Bake the brownie batter: Pour the brownie batter evenly into the prepared pan and bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted in the center comes out mostly clean with a few moist crumbs.
  7. Prepare chocolate ganache: While brownies bake, heat the heavy cream in a small saucepan over medium heat until it just begins to simmer. Remove from heat and pour over the semi-sweet chocolate chips in a heatproof bowl. Let sit for 2 minutes, then stir until smooth and glossy.
  8. Cool brownies and add ganache: Let the brownies cool completely in the pan on a wire rack. Once cooled, pour the chocolate ganache evenly over the top of the brownies.
  9. Add strawberries: Arrange the halved fresh strawberries lovingly on top of the ganache while it is still soft so that they stick well.
  10. Chill and serve: Refrigerate the assembled brownies for at least 1 hour to set the ganache and allow flavors to meld. Slice into squares and serve chilled or at room temperature.

Notes

  • Use high-quality cocoa powder for the richest flavor.
  • Make sure brownies are completely cool before adding ganache to prevent melting.
  • Fresh strawberries are best on the day of serving to maintain texture and flavor.
  • Ganache can be made ahead and refrigerated; gently warm before spreading.
  • Store leftovers refrigerated and consume within 3 days for best freshness.
